The app helps keep everything organized and is really easy to use. I’ve been using it for a while now, and I really like it.

The thing that I personally like about Evernote is that before I have used word as my note taking application, than on my smartphone I have had used Google Keep and so my notes were just unorganized mess. But with Evernote now I can have my notes at one place and unified. Also the fact that I can log to another device and my notes are "just there" is really nice. And also I like graphics user interface of Evernote.

Obsidian is a multi-platform note-taking and writing app. Simple enough. But aren't there plenty of those around? Yes absolutely, but they each have downsides that I wasn't able to settle with long-term. With Google Cloud it was the difficult of linking between notes (this has improved since but it's still not quite what I want). You are right. It would be a nightmare to maintain 50+ versions, store deployments etc manually. But you really don't have to. One of the benefits of using CI/CD tools is easily automating those task for you. There are commercial CI/CD tools out there that are specific for flutter apps. Codemagic and bitrise are two of them.
