Then I've seen people mention things that they call "panels" like Crafty or Pterodactyl. From what I understand this is more of an Interface program to more easily use, in this case, the minecraft server? I know that I would prefer to have it as a Virtual Machine, considering that then I don't need to get another screen and I don't neccesarily have to be home to troubleshoot and fix things etc.

As a start, I would recommend you to ignore these panels, and I would ask you to learn the shell to have comfort with it. Sure, it's nice to have a UI in which everything is labeled, but on Linux you will have to resort to the shell sometimes, so it's better if you get acquainted with it :) If you want some kind of automation, then sure, Pterodactyl is a great tool, but it still uses docker as a core, which is why I would recommend to learn docker before using Pterodactyl (containers and images as an example), but if you just want a forge server as a start, then I would just recommend using none of those. Pterodactyl, or more specific docker, create a virtual machine inside of your OS, to allow compatibility, which just slows things down. If you want to go for performance, pure Linux is the key.

An easy and elegant way to use your computer, GNOME is designed to put you in control and get things done.
Using Xorg and a Window/Desktop Manager (maybe you heard of gnome), you're able to have a functional desktop like Windows.
