Laravel Valet sets you up with an Nginx environment where MAMP/WAMP will give you Apache. They both have free options and give you the ability to run a local web server.     Are you running on Mac or windows? If youโ€™re using Mac I would recommend using Valet and then updating the php version according to the documentation at https://laravel.com/docs/8.x/valet. If youโ€™re using windows I think you can just update is via shell commands but Iโ€™m not quite sure, havenโ€™t used windows in years :p. Maybe this stack overflow article can help you...
