  I want to find an easier way to back up the content from some of my Instagram accounts. What I would like is to be able to save the metadata with the content. So each post would be saved in a folder with content and a separate file for the description and hashtags.   I've done this before to check new Instagram stories. You should not need the official Instagram API to check new posts. I used https://instaloader.github.io/ before, and it's as easy as logging in with your account to get a session, then retrieving the post (it starts with the latest post so that's neat), comparing it's date or ID to the previous post, and then sending the notification to telegram with their bot...
