  I initially looked into CMS's like Strapi and Directus to possibly handle my admin UI + API all at once. I haven't found anything that looks like it can do this yet, but I'd be very happy to be proven wrong.   You can fairly easily add the ability to edit the text using something like https://summernote.org/ This one is for bootstrap, but there are others that are pretty good.
