Hello, I have a Minecraft server running on a Rpi with Paper. It works great and I use it to play with some of my friends. However, the server's public IP address often changes, meaning that I have to give my friends the new IP address daily. Being a programmer, I feel this could be automated. The closest I've found to a useable Trinity sheet is on astraltabletop.com where they have the quickstarts pre-configured. The sheets there are pretty primitive and irksome to use, though. Source: almost 5 years ago
I have a few recommendations based on your concerns. Find a VTT that fits your playstyle. Let the players keep their own character sheets. Have everyone roll real dice. Only use a VTT for sharing maps and placing tokens. owlbear.rodeo or astraltabletop.com have clean, simple interfaces. Astral Tabletop https://astraltabletop.com currently has my attention. A free account is somewhat limited, and I can imagine you may need to only have uploaded whatever assets you need for the next session due to space limitations, but it's easier to use and way more pretty than anything else I've tried.
