I have a few recommendations based on your concerns. Find a VTT that fits your playstyle. Let the players keep their own character sheets. Have everyone roll real dice. Only use a VTT for sharing maps and placing tokens. owlbear.rodeo or astraltabletop.com have clean, simple interfaces. Astral Tabletop https://astraltabletop.com currently has my attention. A free account is somewhat limited, and I can imagine you may need to only have uploaded whatever assets you need for the next session due to space limitations, but it's easier to use and way more pretty than anything else I've tried. My favorite VTT is Astral, but I'm not sure if there's anything unique about it that lends itself to Dark Sun specifically. It's a pretty good, intuitive VTT with easy-to-use lighting and fog effects and free tokens for all of the monsters in the 5e SRD. Source: about 3 years ago
I would recommend checking out Astral or Foundry. Astral has very customizable character sheets, but it doesn't have as much of the compendium stuff that Roll20 has. Foundry is even more customizable than Astral, but you have to either pay them to host a Foundry instance for you or host it yourself, which can be a lot less convenient than something like Roll20 or Astral where you just log into the website.
