KoreLab is a SaaS platform built for artisan food producers - bakeries, pastry shops, pasta makers, dairies and small food brands. It brings together the two tasks that cost an artisan lab the most time and margin: cost control and regulatory compliance.

KoreLab automatically calculates the food cost and full production cost of each product from its recipe and batch - including yield, units and wholesale/retail margins - recalculating across all products whenever a supplier's price changes. From the same recipe it generates EU 1169/2011-compliant technical product sheets, with highlighted allergens and per-100g nutrition facts.

Its Quality module adds HACCP self-control, hazard analysis, audits, batch traceability, registers and PIN signatures, supporting ISO 9001, ISO 22000, IFS Food, BRCGS and FSSC 22000 - plus dedicated collaboration with the food safety consultant.

Key features: - Automatic food cost and full production cost, with cascading recalculation on supplier price changes - Recipe management with versioning - Per-100g nutrition facts computed from ingredients - EU allergens (the 14) aggregated automatically - EU 1169/2011-compliant technical product sheet (PDF) - Supplier and price list management - Multi-standard HACCP self-control (versioned manual, hazard analysis, gap analysis) - Append-only registers and traceability (mock recall) - PIN signature with integrity seal - Consultant collaboration (dedicated access, dual signature)

Built by people who have managed quality and production firsthand in an artisan food lab.

Questions & Answers

As answered by people managing KoreLab and OpenMemory.

What makes your product unique?

KoreLab's answer

KoreLab is one of the few tools that brings food costing and food safety compliance together in the same product, instead of forcing artisan producers to juggle spreadsheets for costs and separate paperwork for HACCP.

  • Automatic costing: food cost and full production cost are calculated straight from the recipe and batch, with cascading recalculation whenever a supplier's price changes.
  • Compliance built in: EU 1169/2011-compliant technical sheets (allergens, nutrition facts) and multi-standard HACCP self-control (ISO 9001, ISO 22000, IFS Food, BRCGS, FSSC 22000) come from the same data, not a separate system.
  • Built for the lab floor: designed by people who managed quality and production firsthand in an artisan food lab, plus dedicated collaboration with the food safety consultant.

Why should a person choose your product over its competitors?

KoreLab's answer

Most food-costing tools (spreadsheets, KitchenCost, Ratatool) stop at the price of a recipe. Most food-safety tools (FoodDocs, FoodReady, The HACCP app) stop at compliance. KoreLab covers both from the same recipe and batch data:

  • No double data entry between your costing sheet and your HACCP manual - one recipe feeds both.
  • Cascading recalculation: change one supplier's price and every affected product's cost updates automatically, across the whole catalog.
  • Multi-standard support out of the box (ISO 9001, ISO 22000, IFS Food, BRCGS, FSSC 22000), not a single generic checklist.
  • A dedicated, PIN-signed workspace for the food safety consultant to collaborate directly, instead of emailing PDFs back and forth.
  • Free tier with 5 products and full food cost calculation, no credit card required.

How would you describe the primary audience of your product?

KoreLab's answer

Artisan food producers and their quality advisors, primarily in Italy and the EU:

  • Bakeries, pastry shops, pasta makers, dairies and small food brands that need to know the real cost of what they make and stay on top of allergens and nutrition labelling.
  • Food safety and quality consultants who support several artisan clients and need a shared, PIN-signed workspace instead of scattered spreadsheets and PDFs.
  • Small teams (owner-operators up to a few dozen products) who have outgrown Excel for costing but don't need an enterprise ERP.

What's the story behind your product?

KoreLab's answer

KoreLab was built by people who managed quality and production firsthand in an artisan food lab, in the Piedmont region of Italy. The recurring problem was simple to describe and hard to solve: nobody had a reliable, up-to-date number for what a product actually costs to make, and keeping HACCP records, technical sheets and allergen data in sync across spreadsheets and paper was a constant source of errors and wasted time.

KoreLab is the tool the founders wished they had on the lab floor - one place where a recipe becomes both an accurate cost and a compliant product sheet, with the quality module and the consultant working from the same data instead of parallel systems.
