Hi! I would dig through the documentation and examples of Formidable Forms. I am not 100% sure if it will be able to do what you're asking, but Formidable is one of the more advanced plugin solutions. If you are looking for free setup - you can combine ACF plugin with Custom Post Types to create your products/services (or extend woocommerce products) and for forms use a Forminator (in free version it provides date-range field needed to select dates). But its Pro version is quite costly, so you might not want it if you will eventually buy the pro version.
