We build Fillout for just this type of reason. If you store the list of countries in Airtable, SmartSuite, HubSpot, Monday, Notion etc. You can have the options automatically sync to your Fillout form (you can't with Google Sheets currently but you can with all those other platforms). It's not as monolithic as you'd think. There are lots of engines out there but their communities aren't very vocal compared to Unity, Unreal, and especially Godot's community.
