It turns a week of customer orders into a time-reversed bake schedule (levain → bulk → proof → bake, counted backward from each pickup time), recipe formulas scaled in baker's percentages, one aggregated shopping list across every order, cottage-food-compliant labels, and a per-order packing list for market day.
