I find that reflecting on my experiences and going out of my way to really analyze the pitfalls and things done correctly helps a lot. I normally use coggle.it to mind map the whole experience overview and then which elements of the project seemed to be improvements and which parts where potentially poorly executed. We've used Padlet in the past but switched to Menti a year ago or so. There are many other tools, and most have an export feature, which allows you to download the data in a format readable by Excel. In Excel, we code each comment according to the categories covered by our in-house course survey: content, facilitation, duration, pacing, venue, materials, learning, relevance, satisfaction, and likelihood to recommend.
