I would definitely give it a try because it won't cost you anything apart from time testing (link here) - it allows fullscreen outputs straight from the GPU - however since you need exactly 8 outputs you might want a simple PCIe output card just for the last output, so you at least have one display going to a monitor somewhere to actually be able to use the PC - unless you want to remote into it via command line... It's actively developed, has been around for over a decade (I have been using it since Google Reader shut down) and has been super stable.
