I have a few recommendations based on your concerns. Find a VTT that fits your playstyle. Let the players keep their own character sheets. Have everyone roll real dice. Only use a VTT for sharing maps and placing tokens. owlbear.rodeo or astraltabletop.com have clean, simple interfaces.
