I'm sure there are many ways, but I used https://sabre.io/baikal/ to get a CalDAV and CardDAV server on cheap (shared, bog standard) web hosting, and then pointed Thunderbird to it. Check Baikal out https://sabre.io/baikal/ probably what you want since you already have a working installation of Postfix/Dovecot. It can store your contacts and calendars in MySQL/MariaDB or a simple SQLite DB. Source: about 2 years ago

I use a custom version of nginx patched so that DAV actually works. You have to enable the DAV extensions module too. Then Baïkal for CalDAV and CardDAV support. Setup is as difficult as nginx is to configure so I guess "it depends". Source: over 2 years ago

I did something very similar years ago in Baikal and its been running mostly intact since then with a few version upgrades here and there. PowerShell to get Exchange GAL contacts in CSV. Perl (because years ago I knew Perl better than PowerShell) to convert CSV to vCard.
