Environment for building software from source?

Professionally I'm what is branded as a "tools data scientist" which means that I less time building models and spend way more time building software to build better models, so while I'm no stranger to software development, unless you go back 20 years my experience is solely Python and Java*, and consequently I'm finding myself completely lost trying to build an executable for something like an old version of LÖVE.

This has to be true for C/C++ as well, right? In fact, I've gotten a setup 90% working conda (pro tip: mambaforge is where it's at) but while this works for single projects where all the deps are available from conda, I'm back at square one when I need to build a missing library that's needed by my application.
