    I use SubEthaEdit for this, but you can also set in TextEdit's preferences for new documents to default to plain text.

    I use iA Writer, which works only with plain text. It will do some additional tweaks if you want (such as typographer's quotes), but those are optional. It also formats things for Markdown, but that's visual only and doesn't change the underlying data. Personally I love it.

    The second branch is called "plaintext editor" or "code editor". As its name implies, it's designed for coding. The mainstream code editor are IDE-like with mods/plugins to expand functionality, such as Visual Studio Code, Sublime Text, Atom, and enterprise level IntelliJ and PyCharm. There are also basic code editor with fundamental features, such as BBEdit, TextMate and CotEdit (https://coteditor.com). And of course, you can always get VIM and GNU Emacs, though I really can't understand.
