I also recall mulinux (it was an Italian Linux project on a floppy), great because flexible: you could use just a disk for the basic stuff and adding more floppies for graphics and even latex if I'm not mistaken! If I remember correctly the author had some sort of streamlined graphic ereader embedded for pdfs (I think it stripped down ghostscipt or something like that), so you might be able to take some inspiration by that, but it was a long time ago and I guess it's difficult to find a working link, you can start here or maybe something is available on archive.org, who knows: http://www.linfo.org/mulinux.
