You can find unpaved trails on the trailforks.com website if you want to find some cool finds like the gangsta car. As for trails, I would take a look at trailforks.com or mtbproject.com . Around town there are several areas. The most popular it Monte Sano state park. Consists of mostly easy trails up top but the trails get significantly spicier as you go off the side of the mountain. There is a blue trail at John Hunt Park off of airport road. Have you checked trailforks.com? It's for MTB, but pretty well used so even short little sections in neighborhood parks sometimes get marked. You won't be able to see the global map without a login, but should be able to see a map for a state then navigate around. Source: over 2 years ago

Also of note. There are a few areas to ride close to the city. Monte Sano, the Space and Rocket Center, and on base near gate 8. However, you will need a recreational pass or base access to get on these trails. The best way to find the trails and see what the open / close status is would be to use trailforks.com. Check out trailforks.com to see all the trails in the area. If you have a car there are tons of trails less than an hour's drive away. If you do get a bike you have to come to the Don Valley trails in Toronto. There's an insane number of trails of all difficulties all within a fairly small area. Source: about 3 years ago
The thing about gm.com is anyone can load up a route from their GPX data. I would cross reference potential routes you see there with trailforks.com to get a better idea about the trail, its intended use, and deeper looks at it.
