You're worrying too much about this. First, you're confusing a Zettelkasten (ZK) with a PKM. You don't need a PKM to have a ZK. And, yes, there are examples of text based ZKs. I'm partial to The Archive. It's a Mac native program built specifically with ZK in mind. Everything is stored in plaintext/markdown in a folder on your computer. I've tried Obsidian, Roam, Zettlr... Best note taking I’ve done is just rubber-ducking to myself in a (public) slack channel solely for that purpose. Never worry about hierarchies, and easily link back to past messages. Best luck I've ever had "taking notes" was borrowing an idea from a former co-worker. He just rubber ducked everything in a personal Slack channel. You get time-centric notes, with the ability to link backwards to former threads of thought.
