Increasing the number of servers you have will increase your administration and if you're new this is not that advisable. HOWEVER, WordPress is well known for getting hacked. I don't think you're understanding correctly. Wordpress.org and Wordpress.com are basically the same underlying platform except Wordpress.com charges you a bunch of money and restricts features, while Wordpress.org does not.
