As an IT team, we need to publish manuals on a regular basis. Typical "click instructions" in particular are very time-consuming to create, but are best understood by users. Yesterday I came across the tool "Scribe", which works in a free version as a plugin in Chrome. Basically really solid, but just only usable in the browser itself and beyond that not open source. Each SME records their process on screen and maybe also a separate, more directed narration/explanation of their process. Uploads videos to a central server. BAs watch a few examples.
