That is most likely interrupting your speed. also, apparently nord does keep some sort of logs if your interested in that.     You download a WireGuard config from protonvpn.com after you configure it like you want. When you add the config to the WireGuard app on your phone, it should have AllowedIPs set to 0.0.0.0/0 by default. This sends all traffic through the tunnel.     I use Proton VPN as my personal VPN and it has never let me down. The paid version is a bit spendy (~$60/year if you sign up for a 2 year term) but there is a free version that should be sufficient for what you want to do.
