I recently discovered Keploy (https://github.com/keploy/keploy) and was really impressed by its promise that it can generate API tests with code coverage by itself just by recording API calls and mocking everything that goes outside of the application - including calls to external API endpoints and the database. Another approach could be to capture real DB traffic (either from production or local) and then use that as a mock for your tests. This way it can isolate external variables from your tests as mentioned by other folks in this thread. I also wrote a tool for this - keploy. Source: about 3 years ago
