I ended up using the free tier of fruux.com (CalDAV service) to sync tasks to iOS. Everything looked good in fruux but was off by +1 days in iOS, not sure why but it was an easy fix. Source: almost 3 years ago
Your original question was about how important it is to encrypt contacts and I think it depends. If you just want to keep your data out of Google's data collection hands, then there are other options to store/sync contacts and calendar data (but most are not E2EE). Fruux.com is listed on the website and it got me interested, mainly due to how straighforward it seems to be. But my question is mostly around the fact that I just can't wrap my head around it being profitable, it just seems like it covers a very specific need (just contacts, calendars and tasks) that I imagine not many companies request.
