Your original question was about how important it is to encrypt contacts and I think it depends. If you just want to keep your data out of Google's data collection hands, then there are other options to store/sync contacts and calendar data (but most are not E2EE). Fruux.com is listed on the website and it got me interested, mainly due to how straighforward it seems to be.
