Your original question was about how important it is to encrypt contacts and I think it depends. If you just want to keep your data out of Google's data collection hands, then there are other options to store/sync contacts and calendar data (but most are not E2EE). Does anyone have any suggestions for a decent calendar application for Windows? I tried Thunderbird/Lightning but it wouldn't sync to my CalDAV (I use Fruux to host), and there was no way to disable/hide the email aspect of the program. Source: about 4 years ago
Fruux.com is listed on the website and it got me interested, mainly due to how straighforward it seems to be. But my question is mostly around the fact that I just can't wrap my head around it being profitable, it just seems like it covers a very specific need (just contacts, calendars and tasks) that I imagine not many companies request.
