Personally I have not used meetme.com before, but I do use when2meet.com quite often. It lets you select the days you want to look at (maybe giving them a 2 week range) and you each fill out what times on those days you are available. Then give them a deadline to have their info input, maybe 3 days as it shouldn't take more than 5 minutes. Source: over 5 years ago

I'd go with number 2 unless you want to buy everyone a hardware token (option number 3). There are open source solutions (I've used https://2fas.com/ ) and very common solutions (Google Authenticator).
