I suggest you go for an asynchronous program like Practicum by Yandex. Their flexibility while also having deadlines and a cohort that stays together worked really well for me while I was working and taking care of a child. Source: over 4 years ago
If you identify as a woman, Practicum by Yandex gives away full scholarships monthly though Women Who Code and they are phenomenal (I did its Data Science program and tried Web Development). Like you, I need structured and cant learn on my own but I also didn't want to commit to class time so Practicum had a nice middle ground as you learn on your own but there are deadlines. Probably API-platform. The website is down at the moment, but: https://github.com/api-platform/api-platform It's Symfony based (and plays nice in that ecosystem), also allows you to describe entities via Schema org vocab, has a client generator, and comes with docker-compose and helm charts.
