  The reason which made me curious in the first place was that I could not compile a document successfully which, however, was possible on my Windows machine where I have installed texlive using the online installer of tug.org.   For a conversion to an e-book, it is possible to take a trip through (La)TeX and TeX4ht, or use Pandoc, which is pretty good at converting from Markdown to HTML (better than between, say, HTML and LaTeX).   Just addressing the pair programming aspect of this - if you were doing this remotely, you could use something like codetogether.com Each of you would have your own machines and screens, but be looking at the same piece of code (if you want) or investigate / code in different areas of the project too.
