I have a custom AWS stack paired with cloudflare. If I were just starting off I would use something like spinupwp which can give you something similar with a nginx/fastcgi setup which is what you want. Then run your dns through cloudflare to take advantage or their proxy/security/performance features. You will not need any "performance" plugins this way which are all heavy and garbage. If you're hell-bent on headless, I can personally recommend 11ty (https://www.11ty.dev/) and hugo (https://gohugo.io/). That said, for non-technical admins, you probably want a user interface.
