While we've only used it for a small size greenfield project with 5-6 developers, we have been very happy with the user experience of Linear [1]. It ties reasonably well into GitHub and have plenty other useful integrations. Notion among others. I imagine this would cover most of OPs use cases, and I think it also support GitHub as IDP.
