I have a custom AWS stack paired with cloudflare. If I were just starting off I would use something like spinupwp which can give you something similar with a nginx/fastcgi setup which is what you want. Then run your dns through cloudflare to take advantage or their proxy/security/performance features. You will not need any "performance" plugins this way which are all heavy and garbage.
