If you're hell-bent on headless, I can personally recommend 11ty (https://www.11ty.dev/) and hugo (https://gohugo.io/). That said, for non-technical admins, you probably want a user interface. Maybe download the installers for Fedora & Tumbleweed and boot to the USB Drive you install the .iso file on to 'try' a distro first instead of destroying you current setup for the totally unknown world of linux.
