We build Fillout for just this type of reason. If you store the list of countries in Airtable, SmartSuite, HubSpot, Monday, Notion etc. You can have the options automatically sync to your Fillout form (you can't with Google Sheets currently but you can with all those other platforms). I also find it strange that it's verified at 114 members with such an obscure name and server icon, especially considering the only thing I could find called The Dataverse with a quick search on DuckDuckGo is this thing that hasn't had any website activity for around a month and doesn't seem to have anything significant to it (also, I don't think "Dataverse" is a brand name or something). The biggest Dataverse installation is the Harvard Dataverse, maintained by the Dataverse Project developers (IQSS), which hosts all sorts of data -- related to published articles or not.
