BrauMo is built around how kombucha is actually made, not adapted from beer software. It knows what a liquid starter is, tracks culture lineage and viability, splits one F1 base into every F2 flavour, and treats acidification and alcohol as the critical control points in a KBI-aligned HACCP system. Water kefir and vinegar production run in the same app at the same price.

Jhael Tabrizi co-founded Verment Kombucha in Teltow, Germany. Running a kombucha brewery means tracking batches, cultures, pH readings, HACCP paperwork, stock and invoices, and no tool on the market understood how kombucha works. Beer software has no word for a SCOBY. BrauMo grew out of that brewery, batch after batch, built together with an engineering team, and everything in it is there because it was needed on the floor. It is now sold as its own product by Jhael Tabrizi, Einzelunternehmen, in Berlin. Verment is the brewery BrauMo was designed and built against, and a separate business from the BrauMo vendor.
Server: Python, FastAPI, Uvicorn, SQLAlchemy, with SQLite as the single database file. Interface: server-rendered Jinja2 templates and plain JavaScript, no framework and no build step, installable as a PWA on phones and tablets. Local network: zeroconf/Bonjour, so devices find the brewery's server automatically. Packaging: native macOS and Windows launchers, and it runs on Linux. Mobile: the iOS companion is SwiftUI with WKWebView. Optional: the Anthropic API powers the AI assistant, off by default and on the brewery's own key.
