There are websites like howlongtobeat.com or backloggery.com that let you track individual game status. You can write down ratings or when you started/finished a game and it tracks that. Yeah I definitely think you have choice paralysis/overload. The only way to solve it, at least for me, is to make a list. Go to howlongtobeat or backloggery or whatever you prefer. Personally, I use howlongtobeat. Make a list of games you're interested in, hit randomize, and stick to whatever it lands on. You can try to use https://isthereanydeal.com/waitlist/ and share that list after making it public or you may even try to make games list on sites like https://backloggery.com/ and share that either but compared to Steam Curation Lists, these will take more time to compile. Backloggery has a "fortune cookie" page where you can have it randomly select a game from your collection (you can limit it to only unplayed/unfinished games and/or by platform/console). I collect Japanese games as well. I use GameFAQs since I've had an account since high school and most of the games have a selectable Japanese version on there. I don't really worry too much about the financial aspects, so I can't speak to that side of things, but another one of my friends uses Backloggery, which is more about cataloging and reminding you to play the games you buy.
