I currently use App Cloner https://appcloner.app/ on my Samsung S21 Ultra to create multiple versions of certain apps - Coffee Shops etc so I can claim extra stamps on different accounts for rewards etc. As it's not available on the Play Store I had to install it as an apk file. Openboard is the best, the only thing that it lacks is the swipe type thingy. Doesnt require internet but I blocked it anyway. (available on fdroid) But still if you wanna use gboard, im afraid idk if it works like that, you cant edit its code or develop or add anything to it, but you can mod it, either you search for modded gboard and block its internet.
