Since FastAPI is just a web framework, it can be used with nearly any DB/NoSQL DB framework that supports Python and your O/S and database driver of choice. Others have mentioned MongoDB and associated PyMongo derivatives, which is probably going to be your main option. It is. Most startups in the EU have to use more and more businesses in the EU. The selection is little, so way more changes to succeed if your EU based and serve both markets.
