Could try Lonely Mountains Downhill. It is a reflex game, but there’s an easy mode where you just bike down the mountains with no time constraints. There are 6 or 7 check points on each trail, so even if you careen off the side, you can just instantly restart your run at the last check point and you don’t lose too much time. I've never played a TdF game; conceptually it sounds hella boring. But one of my FAVORITE games is a 3rd person mountain biking simulation game Lonely Mountains. Might be worth checking out if you're looking for a video game that involves bicycling. Source: over 2 years ago

How long of a hike/walk? Bridle Trails is fantastic. Trilogy area of Redmond (Redmond Ridge) also has a ton of trails. I highly recommend the alltrails.com app or site. You can search by easy/moderate/hard and distance and using the map zoom into a specific area. Source: 10 months ago

If I were you, and people are saying there's an active bear on a trail I would avoid it since you are alone. You'll find some trails people mention not great visibility around some corners or due to huckleberry bushes...I'd avoid those too on your own.
