My suspicion is that something, most likely your CPU, is overheating. Download FurMark, this is a stress test that fully loads your GPU but barely touches the CPU. Run that and compare your score with expected results for the 7900XT (looks to be around 14-15,000 at 1440p). Source: 7 months ago

Start with https://geeks3d.com/furmark and keep an eye on the temperature. If it reboots/BSODs try again. If it keeps happening, then that's probably just overheating and not memory issues, so limit your frames either in-game or in videocard settings. Source: 12 months ago

You could download an Unigine benchmark. If it runs like crap... You don't have acceleration (should be obvious). Where crap is anything less than 30fps (likely it will be far less). Source: 12 months ago
If it's still happening, throw Memtest onto a spare USB, boot to that, and let it run through your RAM for errors. Then check your SSDs (your SSD manufacturer likely has a tool for this). Download and run a GPU benchmark/stress test, Unigine makes a few good ones, MSI Kombustor or Furmark, are good ones that I've used frequently for diagnostic work.
