I purchased the DiA DM bundle on DMSguild (https://www.dmsguild.com/product/295015) which includes great advice on how to run the campaign as well as maps to use. I also use a free app called DM Helper (https://dm-helper.itch.io/dm-helper) to display maps, organize the campaign, and track HP & initiative during combat. Source: over 2 years ago
What I am also not sure about is https://dm-helper.itch.io/dm-helper ... Not because it isn't useful, it's because I am not sure about how to get stuff in there. Maybe you will need an mapmaking tool (like Dungeondraft or something free) to recreate all the maps - but there are many people that already did just that. Source: almost 3 years ago
The closest I've found to a useable Trinity sheet is on astraltabletop.com where they have the quickstarts pre-configured. The sheets there are pretty primitive and irksome to use, though. Source: over 2 years ago
I have a few recommendations based on your concerns. Find a VTT that fits your playstyle. Let the players keep their own character sheets. Have everyone roll real dice. Only use a VTT for sharing maps and placing tokens. owlbear.rodeo or astraltabletop.com have clean, simple interfaces. With a little practice, you can draw maps using owlbear as if you were in person. It has no automation so you don't need... Source: over 2 years ago

Astral Tabletop https://astraltabletop.com currently has my attention. A free account is somewhat limited, and I can imagine you may need to only have uploaded whatever assets you need for the next session due to space limitations, but it's easier to use and way more pretty than anything else I've tried.
