My best suggestion is buying a cheap thin book. I use one. HP T620 Thin Client. You can buy it on eBay for $50 including shipping (here). Then I installed Q4OS (here) which is a Debian based version of Linux. Then install Docker and Portainer. There are many guides on google on how to do it. Dual boot at this point in history is usually a terrible idea. If you have a relatively modern machine it is much better to run Linux and spin up a Windows VM as needed. Lots of ppl have suggested Mint, and Mint is solid, but for your use-case, I would recommend Q4OS. That is the distro I use when I want to set someone up and never talk to them about it again. I just discovered a distro called Q4OS. It has a graphical (GUI) installer that is very user friendly and helpful, it runs great even on my 8 y/o 2Ghz CPU / 2Gb RAM former Chromebook, it is Debian based, so it is stable, and maybe best of all for your use-case, you can make it look *exactly* like Windows 10, XP, or even Vista, with just a couple of clicks. Q4OS has a unique alternative that makes possible setting up multiple desktop environments, typically KDE Plasma 5 and Trinity, side by side without interfering with each other.
