I have had good luck with the docker of poste.io The data container is separate from everything else, so it is easy to back up and restore elsewhere if you had to. I use Poste in a docker container. It sounds like I have the same requirements as you where I just want SMTP for local devices to be able to relay. There is no SMTP in/out from internet. Running self-hosting email is not problem. There is so much solutions to run easily own server these days. But the main problem is that you need a lot of knowledge to do that properly - software might help but it will never be "run and forget" service type. I'm using the open source version of poste.io which miss some features from the commercial one.
