How easy is it to set up and maintain a self-hosted mail server using Docker compared to other alternatives?

For one of my domains I wanted to at least be able to receive email without having to rely on Zoho (already using this on another domain, only one is free though) or a similar service, so I set up a poste.io server and did check outgoing mails using mail-tester.com, adjusting DNS settings etc until it scored really good.
