One way you can work with MFD buttons without taking your hands off stick/throttle is by using modifiers. I have a 3-button foot pedal with the three buttons set as modifiers, which I use in combination with some of my stick's hats to press the most common MFD buttons. Left pedal modifier sends presses to the left MFD, etc. Source: almost 2 years ago

If you have decent use of one leg, you might want to consider replacing your rudder pedals with a more generic foot pedal like those from xkeys: https://xkeys.com/xkeys/footpedals.html then use the foot pedal as a modifier so only when pressed your stick’s twist (or some other axis) works as rudder axis and two other buttons on stick or throttle work as toe brakes.
