One way you can work with MFD buttons without taking your hands off stick/throttle is by using modifiers. I have a 3-button foot pedal with the three buttons set as modifiers, which I use in combination with some of my stick's hats to press the most common MFD buttons. If you have decent use of one leg, you might want to consider replacing your rudder pedals with a more generic foot pedal like those from xkeys: https://xkeys.com/xkeys/footpedals.html then use the foot pedal as a modifier so only when pressed your stick’s twist (or some other axis) works as rudder axis and two other buttons on stick or throttle work as toe brakes.
