UpNote was my winner. Easiest, most flexible formatting (the only app with keyboard shortcuts for text colors and highlight colors), among many other features. Use this: https://danpla.github.io/dpscreenocr/ I set it on Ctrl+Q shortcut. It takes screenshot and transcribe text from the image. The text is automatically copied to clipboard for you. Its English OCR is top-notched. Its other languages are pretty good as well. Still, you'll need to fix the formats a bit. Source: 12 months ago
