  3.The only way I've come across to document the amount of time spent is to use timesheets or time tracking softwares. Some examples of time tracking softwares are Toggl, Hubstaff, and Time Doctor.   Also ask the developer how they want to work, and if there is a software they like to use to facilitate the work. Are they Kanban? Scrum? Waterfall? Watch a video or two on the do's and don't of the one method the Dev wants to use, so you know what to expect if your developer asks you for a "Story" or a "Task" or a "Ticket" or if you need to 'clarify acceptance criteria', which is literally what I was doing at...
