I'm in downtown Denver and enjoy 1 gigabit symmetric fiber for $70/month ('unlimited' bandwidth, no port restrictions, etc) through CenturyLink.     I know it's not as cheap as your current carrier, but have you considered moving to Google Fi? They currently don't support 5G on iPhones, and they're probably a bit more expensive than your current plan. However you could just use the Flexible plan when you're mostly using WiFi and only upgrade to Unlimited Plus when you're traveling.
