The good thing is, you'll still have all of your media sorted and organized on whatever hardware was hosting Plex, so you'll just need to install new software to host it. For more routine work that isn't as deep but is still cognitively demanding, I usually stay at my desk and put on a post-rock playlist and https://mynoise.net/ on top of it (I like Irish coast), so loud that any other noise gets blocked out.
