I recommend gopractice.io - it has what you mention in the 3rd point with access to Amplitude account pre-filled with data. When I did it, there was no instructor and basically self-paced (though broken down very well), but from the emails I see they occasionally have "cohorts", so that might be different. 3.The only way I've come across to document the amount of time spent is to use timesheets or time tracking softwares. Some examples of time tracking softwares are Toggl, Hubstaff, and Time Doctor.
